Spice up your breakfast with these adaptable Masala Egg Muffins

I love this recipe because it is a super combo of health and flavours and is very quick and easy to make.

You can add literally any other veggies like grated carrots, boiled peas, fish such as salmon or, if you are a meat eater, cooked meats/sausages to make this your own. It is adaptable and full of flavours.

These are a really good option for a healthy breakfast. But are also perfect to make in advance for a packed lunch or a picnic. They keep for two days in the fridge.

The muffins are high in protein. You can also serve it with a masala slaw or sautéed vegetables for a healthy lunch option.
