January is the month when we all want to make healthier choices to begin a New Year as we mean to go on. Here’s one from a series of vegetarian recipes I have lined up for you to try out in 2025.

This Moroccan inspired recipe is made up of charred carrots and harissa crème fraiche and is bursting with nutritious flavours for the winter.
