A tangy take on the versatile mushroom

For the next salad on our trail of the theme for the summer, we go a little tangy with a Thai twist. Mushrooms are one of those versatile ingredients that lend themselves to many flavoursome experiments. And, in keeping with my firm belief that salads can be made exciting and fun with just a little Radikal touch, here’s one with a Thai-style dressing. Enjoy!
