A colourful recipe to prove salads don’t have to be boring

Have you ever said: “I hate salads”; “They’re tasteless”; “They’re not filling”; or “I don’t know what to put in them”.

I get it. Most of us grew up with lettuce, tomato, cucumber… maybe a little dressing. That’s not exciting, and definitely not satisfying. But what if your salad could actually taste really good. With a dressing that is easy but yummy? Or, it's crunchy with Mexican flavours?

Salads don’t have to be boring! When you know how to make them, with different flavours, textures and nutrition, they become the most satisfying meal of your day.

The recipe I am sharing here is my go-to salad for any season, simple, easy and quick to make.

Some of the reasons I love it are:

-        It's quick to make, takes less than 20 minutes.

-        Is delicious for lunch.

-        Is satisfying, so I don't feel hungry soon after.

-        Tastes even better the next day, so I always make extra.
